Girl Power playlist

If you haven't got to know me enough yet then you'll know I'm a bit of a feminist and I'm all about girl power and solidarity. A lot of songs in the media are either about heartbreak or don't exactly portray women in the best light or are just down right derogatory.  So I've put together a little compilation of some great girl power songs out there, songs that make you feel good and inspired and some maybe just a little bit feminist!

A chunky vegetable stew - recipe

I'm no chef in fact the only things I can cook are boiled potatoes, veg, beans and potato slices. But now I'm vegetarian I've been trying to try new things and coming up with variety for my meals. I'm definitely a do as little as possible and have a delicious meal kinda girl and this Chunky vegetable Steop ( not quite a soup but not quite a stew, so naturally it's now a Steop) is the perfect recipe!

Potato // Sweet Potato // Celery //Carrots // onion // 2 garlic cloves // broccoli // 2 tinned chopped tomatoes // 3 vegetable stock cubes  // 600ml water (or a little more if needs be) // salt // pepper //
  1. I didn't do any precise measurements when it came to the veg, doing it all really on eye and if it looked enough. Prepare the veg and put all ingredients into a stew pot
  2. Put onto boil and after it's starting to boil turn down to simmer for about 45 mins or until the potatoes and carrots are cooked!
  3. We paired ours with tiger bread then you're good to go!

That really is all there is to it, super simple but incredibly tasty. This was my first time cooking a vegetarian for all the family and it went down incredibly well, I'm definitely going to be making again! If you recreate this recipe I'd love to know and see, just tweet me @courtneeeyj or instagram me a picture with @courtneeeyjr

Gluten free flapjacks - A recipe

Recently my mum found out she can't eat gluten any more, which has taken a lot of adjusting for her; she found a recipe for these flapjacks and they taste amazing. Last week I decided I'd make them for her (and myself of course) and share them with the internet. They're super easy to make so good for the beginners like me!

225g of Gluten free porridge oats // 170g butter // 110g Demera sugar// 55g golden syrup //

  1. preheat oven at 170 degrees and grease tin
  2. Melt butter in a saucepan
  3. Weigh out the sugar and then spoon the syrup on top
  4. Add to the melted butter and heat through until sugar has slightly dissolved
  5. Remove from heat and mix the oats in
  6. Spread into tin and bake for 20 mins
  7. Once out of the oven, gently cut the mix into squares and leave to cool
This is such an easy recipe that you can build on; adding fruit or chocolate chips to the mix to make them extra delicious. You can also switch out the butter for a vegan substitute, which I'm definitely thinking about doing. It's really just the perfect snack!

Here are the things that are currently in my make up bag, I'm not one of those that carries make up on a daily basis but all my go to's are in one bag. If you'd like a review of anything let me know!

My goals for 2016

A new beginning - quote C.S. Lewis & The first step towards getting somewhere is to decide that you are not going to stay where you are "quoteslife101.net:
Image from Pinterest

I say goals because I've never stuck to any resolutions I've ever made, in fact I forget what they are within a week. So goals are the new thing, goals of what I hope to get out of 2016. Not just the usual improve health, read more etc one that I may still want out of the year but are ones that I know I probably won't stick to.
  • I want to be cruelty free
2015 was the year I went vegetarian and stopped buying and wearing leather. Over 2016 I really want everything I use to be cruelty free. I want to eat more vegan meals and possible alternatives if I like them and possibly make the full transition from vegetarian to vegan.
  • Research into more spiritual things
Over the last few months I've really been interested in Buddhism, spirituality, meditation, crystal healing; a variety of things really. Something that I really want to explore in the new year. A lot of people recommend Meditation and Its something I definitely want to take up.
  • Be more positive
I'm not known for my positive attitude, I was always the kid that said they were going to fail, expected the worst. This goal links in with the spiritual goal, I came across the theory that positive thoughts create positive outcomes and what you think become a reality and this is something I definitely want to look more into and put into practice.
  • Achieve what I want to achieve
This is a much broader goal and not just for the year but for life too. I'm lazy, it's a bad habit of mine and I find myself stuck in a rut of being unmotivated and that's not something I want to happen this year as well. I have this *idea* It really is just an idea at the moment but it's something I want to keep working on and hopefully achieve and it become successful. I don't like failure but sometimes you've just got to take a leap of faith.
I'd love to know what some of your goals and resolutions are for this year?

Reflecting on 2015 -

2015 has once again been one of those weird years, when life is starting to get back to normal after what had been a pretty naff 2014. I usually do a 'Highlights of ...' post at the end of the year, but I thought I would do a bit different I'll include the good and the bad because writing after all is pretty therapeutic.

- What a year it's been, I've visited Rhodes, the Isle of Wight and Tipperary in Ireland, all 3 such beautiful places.
- Seeing Mcbusted was a particular favourite moment of the year for me, I'm a massive Mcfly fan and them and Busted together was just one hell of a show!
- I finished college after an amazing two years meeting some amazing friends, hopefully ones that'll be around for a looong time!
- I went to see Shrek on stage and visited the Elvis expedition at the 02, different experiences but both delightful in different ways, I'd recommend going to see either if not both, if you ever get the chance.

2015 has been the year I finally finished college, you probably know I've done two different courses since I left school and in July I finished My Fashion and clothing  level 3 Btec with a DMM, a grade I am pretty chuffed with. A chapter in my life was closed and I was finally in the big wide world on my own, feeling a little (read a whole lot) lost and small in a rather large world.

2015 has been the year I deferred my uni place. I had this plan that I would get a job, get a bit of experience and even travel a little. I'd try and get myself in a happier place. One of the big problems of mine is social things a lot of what are small things to a lot of people, made me feel physically sick and panicky and I wanted to get over that so I'd feel ready for uni. But as you know things never go as planned.

It's been 5 months and I'm still unemployed and not for the lack of trying. I've overcome nothing, in fact I think I've just got worse.  I've come to realise how much I rely on having my iPod when leaving my house on my own. Not having a job or attending Uni I've not needed to go out for anything, to interact with people; I've found myself in an unmotivated rut. A rut I have no desire to be in.

2015 has been the year my family pet Roxie passed away. Although It had been one of those things I knew was coming soon, I mean she was a 16 year old staffie with a few health problems, who I'd had since she was puppy. But still it goddamn sucked and hit me harder then I thought was still possible.

2015 has been the year I've opened my eyes to new things and ways of living. Positivity and living happily and even spiritually is something I've found myself incredibly interested in and hope in 2016 I'll be able to carry it on further!

In retrospect 2015 has been a year where the good times far out way the bad and life is what you are making of it. Everyone has problems, it's what you do to overcome them in the future that really count!
